[NEW] Toasted Quinoa Salad

Ingredients

  • Salad Ingredients 2/3 c. quinoa, cooked
  • 1 lb. sweet potatoes, peeled, cubed and roasted 1 T. olive oil 1/4 t. salt 1/4 t. pepper 2 lg. apples, diced 8 c. baby greens 1/
  • 4 med. red onion, sliced Dressing Ingredients 1/4 c. apple cider vinegar 1 t. Dijon mustard 1/4 c. extra virgin olive oil pinch of salt and pepper

Directions

  1. Preheat the oven to 400ºF. Spread the cooked quinoa on a baking sheet and toast for 3-5 minutes.
  2. Whisk together the dressing ingredients. Combine the salad ingredients and toss with dressing to coat.
  3. Serve immediately.
