Ingredients

  • 2 c. oat flour
  • 1 t. baking soda
  • 1/4 t. salt
  • 1/2 t. cardamom
  • 1 t. ground cinnamon
  • 3/4 c. sweet potato, mashed
  • 1/2 c. canola oil
  • 3/4 c. light, unsweetened coconut milk
  • 1/2 ripe banana, mashed
  • 2 egg whites

Instructions

  1. Preheat oven to 350º F.
  2. Stir together dry ingredients. Mix wet ingredients and beat together with dry ingredients.
  3. Spoon batter onto a cookie sheet. Bake for 20-22 minutes, until cookies are golden brown. Cool on a wire rack.
