Ingredients
- 2 cucumbers, sliced into 1" circles
- ¼ cup shredded carrots
- ½ cup feta cheese
- 1 cup roasted red pepper hummus

Instructions
- Scoop out most of the seeds in each cucumber slice.
- Place about 1 tablespoon of hummus into each bite.
- Sprinkle each bite with carrots and cheese. Serve immediately.
