Ingredients

  • 1 lg. beet, roasted and peeled 1 T. low-fat goat cheese 1/2 c. arugula 2 slices whole-grain bread

Directions

  1. Slice the beet into thin slices.
  2. Heat a non-stick frying pan over medium-low heat.
  3. Assemble all the ingredients in a sandwich and grill lightly on both sides until golden and warmed through.
