Ingredients
- 1 cup quinoa
- ½ cup coarsely chopped seeded tomato
- ½ cup chopped fresh mint
- ¼ cup raisins
- ¼ cup chopped cucumber
- ¼ cup lemon juice
- 2 Tbsp. chopped green onions
- 1 Tbsp. olive oil
- 2 tsp. minced fresh onion
- ½ tsp. salt
- ¼ tsp. pepper

Instructions
- Cook quinoa according to package directions.
- While quinoa is cooking, prep and gently stir together remaining ingredients. Add to cooked quinoa and serve warm or chilled.
