Instructions
- Toss salsa ingredients together. Set aside.
- Mix 1 tablespoon oil, garlic, chili powder, black pepper, and salt in a medium bowl. Add the chicken and toss to coat.
- Heat remaining 1 tablespoon of oil in a large non-stick skillet over medium heat. Sauté the peppers and onions until tender and browning (15-20 minutes). Remove from the skillet and set aside.
- In the same skillet, sauté the chicken until fully cooked (3-5 minutes). Toss with peppers and onions and serve topped with salsa.
