Green Tomato Relish

Ingredients

  • 2 lbs. green tomatoes, cored and chopped
  • 1 lb. onions, chopped
  • ¾ lb. bell peppers, seeded and chopped
  • ½ lb. Granny Smith apples, cored and chopped
  • 6 cloves garlic, finely chopped
  • 1 cup apple cider vinegar
  • ½ tsp. salt
  • 4 jalapeño peppers, seeded and finely chopped
  • 2 Tbsp. chopped fresh cilantro
  • 1 tsp. cumin

Instructions

  1. In a large pan, combine all ingredients except jalapeños, cilantro, and cumin.
  2. Bring to boil and simmer until thickened, stirring occasionally (1 hour). Add remaining ingredients and simmer to combine flavor (5 minutes).
  3. Cool until safe to put in a blender or food processor. Puree until slightly chunky.
