Ingredients
- 2 tsp. olive oil
- 1½ cups brown rice
- 1 clove garlic, minced
- 3 cups water
- ¼ tsp. salt
- ¼ tsp. pepper
- ¼ cup diced onion
- ¼ cup sliced green onions
- 1 cup raisins
- 1 cup chopped dried apricots
- ¼ cup slivered almonds, chopped

Instructions
- Heat oil in large saucepan over medium heat until hot. Sauté rice and garlic until fragrant (1-2 minutes).
- Stir in water, salt, and pepper. Cover, bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in remaining ingredients. Cook until liquid is absorbed and rice is tender (20-25 minutes).
