  • 1 cup shelled edamame
  • ½ yellow pepper, chopped
  • 1 cup chopped grape tomatoes
  • ½ cup finely chopped red onion
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. olive oil
  • Pepper to taste
