Ingredients

  • 1 lb. chicken sausage, parboiled and cut into slices
  • 4 med. potatoes, peeled and cut into 1/2-inch cubes
  • 3 c. shredded cabbage
  • 1 lg. sweet onion, halved and sliced
  • 1 med. green pepper, cut into strips
  • 1 med. sweet red pepper, cut into strips
  • 1 sm. zucchini, sliced
  • 1 sm. yellow summer squash, sliced
  • 12 med. tomatoes, cut into wedges
  • 8 t. extra virgin olive oil
  • 1 T. dried basil
  • ground black pepper to taste

Instructions

  1. In a large bowl, combine the meat and vegetables, gently adding tomatoes last. Divide mixture between eight double-thicknesses of heavy-duty foil. Top each with a bit of olive oil, basil and black pepper.
  2. Fold foil around mixture and seal tightly. Grill, covered, over medium heat for 20-25 minutes or until vegetables are tender. Carefully open foil to allow steam to escape before serving.
