Chestnut Stuffing

Ingredients

  • 1 T. canola oil
  • 1/3 c. onions, diced
  • 2 cloves garlic, minced
  • 2 c. shelled and roasted chestnuts, chopped
  • 1 1/4 c. low-sodium vegetable broth, divided
  • 1 tart apple, diced
  • 1/4 c. Parmesan cheese
  • 4 slices whole-wheat bread, toasted and cubed

Instructions

  1. Preheat the oven to 350º Fahrenheit.
  2. Heat the oil in a medium-sized saute pan. Add the onion and garlic and continue to cook until soft.
  3. Stir in the chestnuts and 1/2 cup of broth and let simmer until liquid is reduced by half.
  4. Turn off heat and stir in diced apple, cheese, toasted bread, and remaining broth. Add more broth if it seems dry.
  5. Bake until golden brown on top, about 20 – 25 minutes.
