Ingredients
- 1 T. canola oil
- 1/3 c. onions, diced
- 2 cloves garlic, minced
- 2 c. shelled and roasted chestnuts, chopped
- 1 1/4 c. low-sodium vegetable broth, divided
- 1 tart apple, diced
- 1/4 c. Parmesan cheese
- 4 slices whole-wheat bread, toasted and cubed

Instructions
- Preheat the oven to 350º Fahrenheit.
- Heat the oil in a medium-sized saute pan. Add the onion and garlic and continue to cook until soft.
- Stir in the chestnuts and 1/2 cup of broth and let simmer until liquid is reduced by half.
- Turn off heat and stir in diced apple, cheese, toasted bread, and remaining broth. Add more broth if it seems dry.
- Bake until golden brown on top, about 20 – 25 minutes.
