Ingredients
- 1 Tbsp. olive oil
- 1 large onion, sliced
- 1 sprig fresh thyme
- Pepper to taste
- 12 slices French bread
- 2 cloves garlic
- 1 Tbsp. olive oil
- 6 olives, pitted and halved

Instructions
- Heat the olive oil in a skillet over medium-low heat. Add the onion, thyme, and pepper. Cook until the onions soft and well caramelized, stirring regularly (1 hour). Remove the sprig of thyme.
- Toast the bread on both sides under the broiler (1 minute per side).
- While the toasted slices are still warm, rub them with garlic and drizzle them with oil on one side.
- Place a dollop of the caramelized onions on each slice of bruschetta and top with half an olive.
