Cozy up with cobbler! This modification on classic cobbler is a piece of cake to put together. Swap in your favorite fruits. A combination of berries and pears in place of apples would be a delightful variation, and of course, a cobbler has never gone awry making use of ripe peaches. Start with a smaller amount of cinnamon and adjust the spices to taste to make this recipe your own.
Directions
- Preheat oven to 375ºF. Spray a 9" pie pan with cooking spray.
- In a large saucepan, whisk together cinnamon, cornstarch, sugar, and water. Stir in apples and cook over medium heat until apples are just barely soft and mixture is thickened (8-10 minutes). Pour apple mixture into prepared dish. Set aside.
- In a medium bowl, combine flour and baking powder. Stir in oil, honey, and buttermilk until just moist.
- Drop biscuit dough by tablespoons on top of apples. Bake until golden brown (20-25 minutes).
