Ingredients

  • 1 cup quinoa
  • ½ cup coarsely chopped seeded tomato
  • ½ cup chopped fresh mint
  • ¼ cup raisins
  • ¼ cup chopped cucumber
  • ¼ cup lemon juice
  • 2 Tbsp. chopped green onions
  • 1 Tbsp. olive oil
  • 2 tsp. minced fresh onion
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  1. Cook quinoa according to package directions.
  2. While quinoa is cooking, prep and gently stir together remaining ingredients. Add to cooked quinoa and serve warm or chilled.
