Ingredients
- ¼ cup thinly sliced red onions
- 1 (19 oz.) can chickpeas, rinsed
- ½ cup chopped fresh parsley
- 2 Tbsp. lemon juice
- 1 Tbsp. olive oil
- 1 Tbsp. capers
- Pepper to taste
- 1 head red leaf lettuce, chopped

Instructions
- Toss onion, chickpeas, parsley, lemon juice, oil and capers together in a large salad bowl. Season with salt and pepper. Serve over lettuce.
