Ingredients

  • 2 tsp. vegetable oil
  • 1 cup chopped onion
  • 1 cup sliced mushrooms
  • 2 cups cooked, cubed chicken breast
  • 2 cups frozen peas and carrots
  • 2 cups egg noodles
  • 2 cups low-sodium chicken broth
  • ½ tsp. garlic powder
  • ¼ tsp. thyme
  • 1 bay leaf
  • Pepper to taste

Instructions

  1. Heat vegetable oil in large nonstick skillet over medium-high heat. Sauté chopped onion and mushrooms until soft (5-6 minutes).
  2. Add remaining ingredients and bring to a boil. Lower heat and cover pan. Simmer until noodles are tender (8-10 minutes).
