These delicious biscuits belong in your regular rotation. They compete well with traditional biscuits for flavor and texture and bring more nutrition to your table--a whole grain no-brainer.
Ingredients
- 1 cup whole-wheat flour
¾ cup flour, plus extra for kneading
- 3 Tbsp. wheat germ
- 2 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
- 3 Tbsp. unsalted chilled butter
- 1 cup low-fat buttermilk
Instructions
- Preheat oven to 400ºF.
- In a large bowl, whisk together flours, wheat germ, baking powder, baking soda, and salt.
- Cut the butter into the flour mixture until the mixture resembles coarse crumbs. Add the buttermilk and stir just until a moist dough forms.
- Turn the dough out onto a generously floured work surface and roll the dough into a ½" thick rectangle. Using a biscuit cutter dipped in flour, cut out biscuits. Gather the scraps and roll out to make additional biscuits.
- Place the biscuits about 1" apart on an ungreased baking sheet. Bake until the biscuits rise to twice their unbaked height and are lightly golden (8-10 minutes).
