This flavorful dish is ideal on a brisk autumn's night. Serve with a hearty side of roasted root veggies and a lightly dressed green salad.
Ingredients
- 1 lb. pork tenderloin, sliced 1" thick
¼ tsp. salt
⅛ tsp. pepper
- 2 Tbsp. apple jelly
- 2 Tbsp. brandy
- 1 Tbsp. chopped fresh parsley
Directions
- Sprinkle both sides of each pork slice with salt and pepper. Microwave apple jelly to soften (15 seconds). Brush tops of pork with jelly.
- Coat a large skillet with nonstick pan spray and heat over medium heat. Add the pork and cook until no longer pink in the center (5 minutes per side).
- Add the brandy to the skillet to deglaze, stirring the browned bits from the bottom of the skillet into the brandy. Cook until slightly thickened (2 minutes).
- Serve pork with brandy sauce and parsley.
