It's quick, delicious and healthy—a perfect recipe for playing with a little wine to cook fish. Whether the end result comes out picture perfect or messy, you can't lose with the flavor.
Ingredients
- 1 Tbsp. olive oil
- 1 cup sliced mushrooms
½ cup chopped green onion
- 1 clove garlic, minced
- 2 Tbsp. rosé or white wine
2 tomatoes, sliced
½ cup chopped broccoli
- 2 oz. haddock fillet
- 2 Tbsp. chopped fresh parsley
Directions
- In skillet, heat olive oil. Sauté mushrooms, onions, and garlic until starting to soften (4-5 minutes).
- Add remaining ingredients except parsley. Cover and simmer until fish flakes easily with fork (8-10 minutes).
- Remove fillets to warm platter. Pour vegetables over fish and top with parsley to serve. If you like, lemon and paprika make lovely garnishes.
