1 lb. skinless, boneless chicken breasts

2 bell peppers, chopped
1 cup apple juice
¼ cup onion, chopped
½ tsp. sage
2 cloves garlic, minced
¼ tsp. pepper
4 tsp. water
1 Tbsp. cornstarch
2 Granny Smith apples, sliced

Instructions
Coat a large nonstick skillet with cooking spray. Heat over medium-high heat. Sprinkle chicken with salt. Cook chicken, flipping halfway through, until it reaches a minimum internal temperature of 165ºF (8-10 minutes). Remove chicken from skillet and set aside.
Add peppers, juice, onion, sage, garlic, and pepper to skillet. Bring to a boil. Reduce heat and simmer, covered, until vegetables are tender (2-3 minutes).
In a small bowl, combine water and cornstarch. Stir in apples. Cook and stir until thickened and bubbly (2-3 minutes). Return chicken to skillet and heat through to serve.
