2 c. old-fashioned oats
1 t. baking powder
1 T. brown sugar
1/4 t. kosher salt
2 c. strawberries, sliced
1 c. skim milk
1 egg
1/2 c. plain, fat-free Greek yogurt
1/2 t. vanilla extract
1 T. unsweetened shredded coconut

Instructions
Preheat oven to 375ºF. Spray a pie pan with non-stick cooking spray.
In a large bowl, combine dry ingredients.
In a separate bowl, whip together wet ingredients.
Mix wet ingredients into dry. Pour mixture into pie pan.
Arrange strawberries on top of the oat mixture. Sprinkle with coconut.
Bake for 35 minutes until middle is set and edges begin to brown.
