Instructions
Place potatoes in a large pan and add enough water to cover. Bring to a boil over high heat. Boil until tender when pierced with a fork (20-25 minutes).
Drain and return the potatoes to the pot. Add buttermilk and mash with a potato masher. Stir in 1¼ cups cheese until melted. Stir in salt, pepper, and 3 tablespoons chives.
Serve garnished with the remaining ¼ cup cheese and 1 tablespoon chives.
