1 T. olive oil

1 t. balsamic vinegar
2 slices sourdough bread
1 clove garlic, minced
1 T. mayonnaise
1/2 c. baby spinach
1/3 c. red pepper, roasted

Instructions
Heat the oil over medium-high heat. Add the mushroom and season with salt and pepper. Cook until golden-brown.
Stir in vinegar and garlic. Cook for about 1 minute more.
