Instructions
Preheat oven to 425ºF and move the rack to the upper third of the oven.
Coat a large, 6-muffin baking tin with cooking spray. Heat the muffin tin in the oven for 2 minutes.
In a large bowl, beat together all ingredients until smooth. Fill the heated muffin molds two-thirds full. Bake in the top part of the oven until golden brown and puffy (25-30 minutes).
