[NEW] Pasta With Grilled Chicken, White Beans & Mushrooms
This is a great recipe for using up leftover pasta! Especially if you're growing basil in your garden and have loads to spare--pile this dish with as much fresh basil as you have. It will be that much more amazing.
2 oz. rotelle pasta, cooked
¼ cup Parmesan cheese
Pepper to taste

Instructions
Heat a grill to high. Grill or broil the chicken until it reaches a minimum internal temperature of 165ºF (5 minutes per side).
Transfer the chicken to a cutting board and let rest 5 minutes. Slice into strips.
In a large frying pan, heat the olive oil over medium heat. Add the onions and mushrooms and sauté until tender (5-10 minutes).
Stir in the white beans, garlic, basil, grilled chicken, and cooked pasta. If pasta is cold, heat on low until mixture is warm.
Top with Parmesan and pepper to serve.
