Start this oatmeal about eight hours before you want to eat it. Dress it up with fresh or frozen fruit and a tablespoon or so of nuts to round out the meal.
1 t. olive oil
1 c. steel-cut oats
3 c. water
Pinch salt
1 c. skim milk

Instructions
Heat oil in a medium saucepan set over medium heat. Add the oats and fry them until they start smelling nutty.
Stir in the water and salt. Bring to a boil.
Turn off the heat and cover the pan. Leave it on the stove overnight.
In the morning, uncover and stir in the milk. Bring back up to a simmer over medium heat.
