Ingredients
- 4 T. olive oil
- 1 1/2 c. onion, minced
- 1 T. garlic, minced
- 1 T. brown sugar
- 1 t. kosher salt
- 1 t. garam masala
- 2 t. ginger
- 1/2 t. coriander
- 1/2 t. cinnamon
- 1/2 t. mustard seeds
- 2 c. tomatoes, chopped
- 1/2 c. low-sodium vegetable stock
- 1 1/2 lbs. green beans, trimmed

Instructions
- Warm oil over medium-high heat in a large pot. Stir in the onion and cook until tender, 5 minutes. Stir in garlic, sugar, salt, garam masala, ginger, coriander, cinnamon, and mustard seed. Cook until seeds pop, 1 minute.
- Stir in the tomatoes and stock. Bring to a simmer and add beans. Reduce the heat to low, cover, and simmer until beans are cooked.
