Instructions
Preheat oven to 350ºF. Place chicken in baking pan.
Heat oil in a large skillet over medium-high heat. Sauté the vegetables until soft and brown (7-8 minutes).
Arrange vegetables around chicken and cover with sauce. Bake until chicken reaches a minimum internal temperature of 165ºF (25-30 minutes).
