3 cups broccoli
2 garlic cloves, minced
½ cup sliced green onion
½ cup egg substitute
2 Tbsp. light soy sauce
½ tsp. chili powder
½ tsp. garlic powder

Instructions
Cook rice according to package directions.
When rice is almost done cooking, heat oil in a large skillet over medium-high heat. Add broccoli and sauté until tender (3-5 minutes).
Add garlic and green onions and sauté until golden brown (2 minutes).
Add egg to the center of the pan and scramble (3-4 minutes).
Stir in seasonings. Serve hot over brown rice.
