Spaghetti Marinara

Ingredients

  • 2 Tbsp. olive oil
  • 5 cloves garlic, minced
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 1 cup sliced button mushrooms 1 onion, chopped
  • 3 Tbsp. tomato paste 2 (
  • 8 oz.) cans diced tomatoes
  • 1 Tbsp. basil 1¾ cup water ¼ cup red wine
  • 6 oz. angel hair pasta ¼ cup grated Parmesan cheese

Instructions

  1. Heat 1 tablespoon oil in a large skillet over medium. Sauté garlic until lightly browned (1 minute).
  2. Cook chicken, mushrooms, and onion in same skillet with remaining 1 tablespoon olive oil until chicken is cooked through and mushrooms have released their liquid (8-10 minutes).
  3. Stir in tomato paste. Add crushed tomatoes, basil, and water. Bring to a simmer, cover, and simmer for 30 minutes, stirring occasionally.
  4. Stir in wine, cover, and continue simmering for another 30 minutes.
  5. During last fifteen minutes of simmering time, cook pasta according to package directions.
  6. Serve pasta topped with sauce and cheese.
