Ingredients
- 1 med. portobello mushroom, washed and sliced
- 1 T. olive oil
- Black pepper to taste
- 1 t. balsamic vinegar
- 2 slices sourdough bread
- 1 clove garlic, minced
- 1 T. mayonnaise
- 1/2 c. baby spinach
- 1/3 c. red pepper, roasted

Instructions
- Heat the oil over medium-high heat. Add the mushroom and season with salt and pepper. Cook until golden-brown.
- Stir in vinegar and garlic. Cook for about 1 minute more.
- Toast the bread and spread with mayonnaise. Assemble sandwich and enjoy immediately.
